Pure soy sauce, fermented only with water and salt. Nutritionally, therefore, it contains more iron and more carbohydrates. It has a stronger flavor and aroma, and a thicker texture. Thus, it is usually used moderately for cooking (must be added at the end of cooking to keep the enzymes alive).
