The umeboshi vinegar is obtained by allowing this fruit of Japanese origin to ripen, then pressed and extracted its juice, red. Its flavor is between sour and fruity, and usually contains umeboshi juice, sea salt and shiso leaves. It is a seasoning that is usually used to season vegetables or salads.
